RED HONEY PROCESSED : The RED HONEY PROCESS is slightly more complicated but well worth it to produce some of the best flavors. It’s not easy to honey process coffee. In fact, it takes a long time and you have to be very careful. First the coffee is floated to remove all the bad beans.  Then the remaining beans goes straight to the de-pulper. Red honey coffee will typically have approx. 50% mucilage left on the bean after de-pulping.  This takes longer and is typically developed with cloud cover or shading.  Then the beans go straight to the patio for 4-5 days.  After the beans have dried slightly as this process is super sticky, the coffee will be taken to the solar dryer for an additional 15-18 days until dry.  This is called red honey process it creates a sticky sweet bean with an amazing peach smell and red color to the bean.

You have read before about our relationship with Ashley and Julia Williams from Legacy Farms Coffee.  We have been blessed to learn about a young lady by the name of Ana who has a small coffee farm not far from Legacy Farms in Cerro Buenso Honduras. She and her family have hand selected each coffee cherry and with the help of Legacy Farms have been able to produce a harvest this year to help support her family and provide a college fund for her daughter.

This is the first time for Ana and her family to be able to export their coffee.  We are very honored they entrusted Legacy Farms Coffee with this crop since their harvest is a huge portion of their income.  Your purchase of their coffee is truly life changing for them.  It allows for education for their children and basic improvements in their standard of living.  Ana has a very, very special place in the hearts of Ashley and Jullia Williams, owner of Legacy Farms Coffee, and they are thrilled for us to have the opportunity to try her coffee.

I asked Ashley how we at TnT Coffee Roasters could help Ana. He said “You are fixing it, you’re paying what it costs to grow coffee, in volunteering my resources to get it to market, my family helps bag and sell it. We’re making a difference, Anas daughter will go to college. Next year Santos and Verjillio will have coffee with mine.” “The price she will get for 1 bag here will be more than the mill pays for her entire farms production.”
